- 2006
- We bought new tables in March
- Gino put down a new floor in the dining room with his cousin Jorge in April 2006.
- We got a new refrigerator (a cooler, in restaurant lingo) for the kitchen in May 2006.
- The new Air Conditioner was in place before the hot weather kicked in, in June 2006.
- The previous owners were kind enough to allow us to fall behind in the payment of our debt to them, but we paid off the last of it April 2006. Only two months behind schedule. Now it all belongs to us! And we're out of debt!
- We passed our one year anniversary in February of 2006 as the proud owners of Cholo's Kitchen.
- 2007
- In February of 2007, obviously, our 2nd anniversay. Happily a fixture of downtown New Rochelle.
- I'm still not sure if this is "news".
- May of 2007, We are re-open after a huge major renovation which kept our doors closed for 8 weeks. Back in debt!
- We have an expanded menu since the renovation which includes the use of our new 36" char broiler. We can now do authentic Anticuchos, and beautiful rare steaks, and real grilled chicken, which everyone seems to want.
- We use (and always have) only corn oil and olive oil in the kitchen. Both of which are trans-fat free. (we're supposed to be on some website of Westchester.gov for this, but I've never seen it.)
- New Rochelle wants $500 for a permit to put 2 tables and 4 chairs of out-door seating between Memorial Day and Labor Day. We've decided to not do it, what do you think?
- 2008
- We have 3 years at Cholo's and things continue to improve. There are more people working here than ever! That must be a good sign, right?
- A huge increase in our costs this spring (rent went up and food prices seem to increase every week) forced us to increase our prices. We waited as long as we could.
- For the summer, we're open from Mon.-Sat. Closing on Sunday, so we can go to the beach with everyone else.
